Vegetable Masala

To Serve 2-3

Carrot | 50 g |
Beans | 50 g |
Potato | 75 g |
Cauliflower | 50 g |
Melam Vegetable Masala | 3 tbsp |
Onion | 3 no |
Tomatoes | 2 no |
Green Chilly | 2 no |
Ginger Garlic Paste | 1 tbsp |
Curry Leaves | 10 no |
Coconut Milk thick | 1 cup |
Vegetable Oil | 2 tbsp |
Salt | To Taste |
Coriander leaves | For garnishing |
Cooking method:
- Heat the oil in a kadai.
- Add onion and sauté till it changes to light brown.
- Add the green chillies, cubes of vegetable and sauté for 2 min.
- Add Melam Vegetable masala powder and sauté for 2 minutes.
- Add tomato, salt to taste and water as required.
- Allow vegetable to boil well and become soft.
- Add coconut milk and allow to simmer.
- Remove from the heat and garnished with coriander leaves and fried curry leaves.
